Fish Tacos
2 corn taco shells 
2 oz fresh fish (your choice) 
1 oz shredded cabbage
1 oz pineapple salsa (recipe below) 
1 oz cilantro sauce (recipe below)
To serve, warm taco shells and fill with fish, cabbage and salsa as desired. Drizzle with cilantro sauce.
Pineapple Salsa
half a pineapple, diced fine 
half a red onion, diced fine 
half a red pepper, diced fine 
small bunch of cilantro, chopped 
1 lime, zested and juiced
sea salt and cracked pepper
Combine all ingredients and season to taste with salt and pepper.
Cilantro Sauce
1⁄2 cup (125 mL) mayo 
1⁄2 cup (125 mL) sour cream 
half bunch cilantro, chopped 
2 limes, zested and juiced 
a good pinch of fresh ground cumin
Combine all ingredients and mix well.
