Sparkling Ontario Apple Cocktail
½ cup (125 mL) Ontario sparkling wine
2 tbsp (30 mL) Heritage apple syrup*
1 tbsp (15 mL) Campari
Pour apple syrup and Campari in the bottom of a flute and top with sparkling wine.
*Heritage Apple Syrup
2 cups (500 mL sugar
2 cups (500 mL) water
2 cups (500 mL) roughly chopped heritage apples, do not remove skins
In a large pot combine sugar and water, bring to the boil. Add apples and simmer for one hour over low heat. Remove from heat, cool, strain and store in an airtight container. Heritage apples are available throughout Ontario, but a local, Organic apple will work just as well.
