Champagne & Pink Peppercorn Mignonette

Serve this sauce with fresh oysters for an easy, light summer appetizer. At Radius they serve oysters fresh from Rodney's Oyster Depot in Nine Mile Creek, Prince Edward Island.

1¾ cup Champagne vinegar
3 tbsp + 1 tsp red wine vinegar
1/3  cup finely diced shallots
¼ bunch fresh parsley, washed and finely chopped
3 tbsp pink peppercorns, crushed
1½ tsp salt

Combine all ingredients. Refrigerate for 30 minutes. Serve with fresh oysters.
