Sweet Potato Pie

A sustainable, staple ingredient in St. Kitts dishes, the sweet potato was recently the featured ingredient during the island’s annual Restaurant Week.

Try this recipe for your Thanksgiving holiday dinner as a sweeter dessert alternative to pumpkin pie.

Makes one pie.


3 medium sweet potatoes (about 1 pound)

1 tbsp butter

1 tbsp granulated sugar

8 oz. can of crushed pineapple


Preheat oven to 350F.

Boil sweet potatoes until they are fully cooked. Remove from heat and drain water.

Mash in a bowl and set aside to cool.

In a saucepan, add sugar, butter and crushed pineapple and simmer over low heat.

Once simmered, remove from heat and stir the sauce into the mashed potato mixture.

Place the mixture into a pre-greased dish and bake for 30 minutes.

To serve, top with a scoop of ice cream and enjoy!
