Crab Crusted Arctic Char

1 tub of crabmeat

1 egg

1 tsp (5 mL) finely diced shallots

1 tsp (5 mL) finely chopped chive

1 tsp (5 mL) shredded horseradish root

¾ cup (180 mL) fresh breadcrumbs

3 tsp (15 mL) olive oil

salt and pepper to taste

6-6oz pieces Arctic Char


Mix all above ingredients together except crab and char in a bowl. Flake crab into bread mixture. Set aside. Sauté 6, 6oz pieces of arctic char in a little grape seed oil. Season with salt and pepper. Cook  for one minute with flesh side down. Turn over and place crab crust on arctic char. Cook in oven at 400°F for seven minutes. Serve with wild mushrooms and drizzle with extra virgin olive oil.
