Lemon Infused Gin
2 cups (500 mL) Victoria Gin
1 cup (250 mL) sugar
Slice the lemons in 1/2-inch slices, place in a large glass jar with a sealable lid, add sugar and pour gin over the top. Seal and store in a cool dark place, turn or roll the jar occasionally, this would be ready in as little as 12 hours, but could be left longer for more lemon flavour. Serve in a collins glass over ice, topped with soda watrer and garnished with a lemon slice
Summer of Bubbles
1oz lemon zest syrup (recipe below)
Champagne or sparkling wine
To serve, place lemon zest syrup in a champagne glass and top with your favourite Champagne or sparking wine.
Lemon zest syrup
1/2 cup (125 mL) sugar
1/4 cup (60 mL) water
1/4 cup (60 mL) fresh lemon juice
Finely grated zest of one lemon
Combine sugar, water and lemon juice in a small sauce pan, heat on low until sugar is fully dissolved. Cool syrup, add zest & stir to combine.
2oz Victoria Gin (lemon infused)
Dash of Bitters
For the bitters, Twisted & Bitter an all natural Orange bitter made by Victoria Spirits, is recommended.
Shake vigorously, strain into a Coupette or Martini glass and garnish with a large lemon twist.
