Orecchiette alla Barese

Orecchiette alla Barese
12 oz broccoli
2 garlic cloves, peeled and chopped
4 anchovy fillets
fresh chili, sliced
200 grams orecchiette pasta
200 ml extra virgin olive oil
4 tbsp pecorino

In a medium sized pot, bring salted water to a boil. (At Tavolo they use kosher sea salt). Add the orrecchiette.

After approximately 6 minutes (time varies), add broccoli to the water and cook for approximately 5 more minutes, until broccoli is tender and the pasta is al dente.

Place a sauce pan on medium low heat. Add extra virgin olive oil. Once the oil is hot, add anchovies and with spoon, crush anchovies into a paste. Add the garlic and chili.

Drain the pasta and broccoli. Save some of the pasta water (in case pasta is dry). Toss the pasta and broccoli with the anchovy paste in the sauce pan with the extra virgin olive oil. Season with sea salt and black pepper to taste.

Separate mixture on two plates, top with additional pecorino and serve.
